Introduction
Golden Harvest is Bangladesh’s one of the leading business groups with diversified interests
in Food, Dairy, Commodity, Information Technology, Logistics, Real Estate, Aviation,
Infrastructure Development and Insurance.
On 18th May 2022, all students with three teachers and staffs of Institute of Agribusiness and
Development Studies (IADS), Bangladesh Agricultural University went for a day long trip to
Gazipur with an aim to visit Golden Harvest Ice-Cream Ltd and Golden Harvest Agro
Industries Ltd.
The purpose of the field trip was to look at existing conditions and facilities available at supply
chain management system of Golden Harvest Ice-Cream and Agro Industries Ltd. which being
upgraded each year to fulfill their requirements. We were able to connect what we learned in
class with actual activities conducted at the industry.

Trip Objective
The objectives of the trip was to get to know the agro industry in more details in terms of the
raw material and out sourcing, production line, marketing chain, management and operational
system etc. to get exposure on products.
Specific objectives were as follows:
 To familiarize the practical work and evaluate our understanding of applying the theory
 To get information how ice-cream and agro industry works in developing country like
ours
 To identify techniques and method used for agro industry in production
 Using our knowledge to find out supply chain day to day activities of agro industry

Methodology
This report is an academic work and based on the visit to Golden Harvest Agro Industry Ltd.
Some data of this report are sorted from Golden Harvest website and internet site.

Field Observation
On that day trip, we visited Golden Harvest Ice-Cream Ltd. and Golden Harvest Agro
Industries Ltd. to observe practically their supply chain management. We were guided by
general manager, senior manager and assistant manager as host who explained in details about
the product line. During the tour, we jotted down some notes and interviewed the host about
how the raw materials could be processed and distributed. The question and answers session
between us and the host took about half an hour with good experience. The conduciveness of
the environment of the industry helped us learn more on product branding which could help
students to apply in future especially for those who are interested in agro business.
The following are providing the description of ice- cream and frozen food production line and
supply chain.

1. Golden Harvest Ice-Cream Ltd.
Golden Harvest Ice-Cream Ltd. is the new entrant in the Bangladesh ice-cream industry with
the brand BLOOP. The ice-cream industry in Bangladesh is growing steadily at around 12%
every year and has been estimated at BDT 10 billion in the fiscal year 2014-15. Golden Harvest
has set up a brand new plant from Tetra Pack Sweden and is being operated under the
supervision of a highly experienced Danish production manager. The brand offers around 40
various variants including sticks, cups, cones, calippo, sorbets, tubs, cakes and many more.

At ice- cream processing factory, we were guided by Shamim Reza assistant manager of
production and R & D department who explained in details the whole product line from
supplier to distribution. Golden Harvest has set up a new brand offering around 40 various
variants including sticks, cups, cones, calippo, sorbets, tubs, cakes and many more.

The following discussion provides a general outline of the steps required for making ice cream
as we observed at the factory.
1.1. Reception and Storage of Raw Materials
All of the required raw materials are supplied from local vendors and stored under factory
inspection. Hygiene and temperature are well maintained in storage.Dry products are usually
delivered in bags. Bulk materials such as sugar and milk powder can be delivered in containers
and blown into storage silos using compressed air. Liquid products are often delivered in
tankers. Milk products are stored below 5’C during storage, while sweetened condensed milk,
glucose and vegetable fat must be heated to a relatively high temperature to keep the viscosity
low enough for pumping. Milk fat is delivered in the form of anhydrous milk fat or blocks of
frozen butter, which are melted prior to use and pumped into storage tanks where a temperature
of 35’C to 40’C must be maintained.
The ingredients used in ice cream production are:

 Sugar/ Non-sugar sweetener
 Stabilizers
 Flavours
 Colours
 Other ingredients
A wide range of flavourings are used in ice cream. The most popular flavours are vanilla,
chocolate and strawberry. Natural or artificial colours are added to the mix to give the ice cream
an attractive appearance. Dry ingredients are either added through an ingredient dozer or as top
decoration matter on cones, cups and bars Flavourings include natural and artificial flavours,
fruit, nuts, and bulky inclusions such as chocolate chunks and candies.
1.2. Production Process
The following discussion provides a general outline of the steps required for making ice cream

The Production process of the ice cream facility is broken down into some steps: raw material
delivery and storage, base mixing, homogenization and pasteurization, aging, flavor addition
and continuous freezing, filling and forming, and finally hardening. Three separate process
lines are utilized, with two of the three lines containing aging tanks for premium products. The
ice cream for novelty items is produced from the line without aging tanks.

The milk fat source, nonfat solids, stabilizers and emulsifiers are blended to ensure complete
mixing of liquid and dry ingredients. Ice cream mix is pasteurized at 155°F (68.3°C) for 30
minutes or 175°F (79.4C) for 25 sec. Liquid flavors and colors may be added to the mix before
freezing. Only ingredients that are liquid can be added before the freezing, to make sure the
mix flows properly through the freezing equipment. Ice cream mix can be frozen in batch or
continuous freezers and the conditions used will depend on the type of freezer. Batch freezers
consist of a rotating barrel that is usually filled one-third to one-half full with ice cream mix.
As the barrel turns, the air in the barrel is incorporated into the ice cream mix. Ice cream
freezers designed for home use are batch freezers. Continuous freezers consist of a fixed barrel
that has a blade inside that constantly scrapes the surface of freezing barrel. The ice cream mix
is pumped from a bulk tank to the freezing barrel and the air is incorporated with another pump
just before it enters the freezing barrel. The continuous freezing process is much faster than the
batch freezing process.

Fruits, swirls, and any bulky type of flavorings (nuts, candy pieces, etc.) are added at this point.
These ingredients cannot be added before freezing or they would interfere with the smooth
flow of the mix through the freezer. Biscuits are baked by auto machine for cone ice cream.
The ice cream at this point is soft and it is easy to mix in the bulky flavorings so they are
uniformly distributed throughout the ice cream. Mixing in bulky flavorings after freezing also
prevents damage to the pieces and allows them to remain whole or in large chunks. The ice
cream is cooled as quickly as possible down to a holding temperature of less than -13°F (-
25°C). The temperatures and times of cooling will depend on the type of storage freezer. Rapid
cooling will promote quick freezing of water and create small ice crystals. Storage at -13°F (-
25°C) will help to stabilize the ice crystals and maintain product quality. At this temperature
there is still a small portion of liquid water. If all the water present in the ice cream were frozen,
the ice cream would be as hard as an ice cube.
1.3.Packaging and Distribution
The raw materials of packaging are imported. Labeling and packaging pattern are well checked
by labors from various levels. After packaging of ice cream in different size of packet case

this temperature there is still a small portion of liquid water. If all the water present in the ice
cream were frozen, the ice cream would be as hard as an ice cube. The freezer van directly
enter to cold storage. After loading up these vehicles, these are distributed for dealers or direct
retailers all over the country.

2. Golden Harvest Agro Industries Ltd.


Golden Harvest Agro Industries Ltd. is a publicly listed company which is one of the pioneers
in Frozen Food manufacturing in Bangladesh. The brand is known, both locally and abroad,
for its wide range of ready to cook frozen products.

Golden Harvest Agro Industries Ltd. takes pride in its food processing plant & supply chain.
For its production and supply chain facilities the company has received many certifications
including ISO 22000:2005, 9001:2008 & HACCP. The company’s supply process is linked
with over 100,000 Bangladeshi agricultural partners who supply 95% of the company’s raw
materials. The food processing plant is situated in Gazipur which is equipped with state of the
art machineries and is maintained by a team of industry’s best professionals. The company
distributes nationwide and exports to USA, Canada, Australia, Middle East and the European
countries, maintaining a temperature of -18⁰ C through its cold chain network. All these ensures
top quality products, farm to fork!
At food processing factory floor, we were guided by Atiar Rahman Senior manager of agro
food production who briefly described in details of food processing chain.
They process Chicken, Beef & Vegetable Samosa, Mini Aloo Singara, Chicken Nuggets, Meat
Balls, Chicken Sausage, French Fries, Rice & Atta Rooti, Deshi Parata, Spring Roll, Dal Puri,
Pop Chicken, Beef & Chicken Barger Patty and so many variations. Golden Harvest Agro
Industries Ltd. takes pride in its food processing plant & supply chain. For its production and
supply chain facilities the company has received many certifications.

as we observed at the factory

2.1.Reception and Storage of Raw Materials
All of the required raw materials such as vegetables, spices, flours etc are collected from local
suppliers and chicken are supplied from CP day by day. Every elements are stored in secured
and well temperature controlled place. Maintaining hygiene is their first priority to making
food. For frozen food cooling system should be highly maintained in storage. The company’s
supply process is linked with over 100,000 Bangladeshi agricultural partners who supply 95%
of the company’s raw materials.
The ingredients commonly used in Frozen Food production are:
 Flour
 Chicken
 Salt
 Spices
 Oil
 Vegetables
 Other ingredients
On that day, we have seen making of parata, samosa, singara, sausage, nuggets and French
fries in the production floor.
2.2.Cutting and Kitchen Unit
In cutting zone all raw ingredients for example potatoes, onion, zinger, garlic, vegetables are
cut manually by labors. There is a kitchen zone for cooking the filler or staffing of samosa,
singara, spring roll. After cutting all raw ingredients, these are shifted to kitchen for cooking
by chefs. Cooked fillers are served in treys and moved to production unit.
2.3.Mixing and Production process
All flour materials with others ingredients according to their recipe for pastry sheet are mixed
by automatic machine with exact ratio. Food value and nutrition is properly maintained by lab
technicians.

Frozen Parata is made by auto machine completely including forming, molding, packing,
freezing.

In production line, samosa, singara and roll items are filled by manually by labors in required
shape. Once production is completed and quality is assured, the frozen products are distributed
through an extensive network of temperature controlled transportation system. This process is
same as for sausage and nuggets as well as meat balls. Proper packaging is maintained in
freezer. French fries are made totally automatically from cutting to packaging.

2.4.Packaging and Distribution
The packaging and labeling pattern are well designed and strictly checked by labors from
various levels. After packaging of ice cream in different size of packet case Storage at -35°C
will help to stabilize the pastry sheets with staffing and maintain product quality. All finished
products are at distribution unit waiting to load freezer van. These loaded van distributes to all
over the country every day.

Golden Harvest Foods Ltd. started in 2012 to cater the ever increasing consumer market in
snacks industry. From the very beginning, they have employed a simple yet very profound

is a promise they tend to keep from sourcing raw materials to packaging process, making sure
high quality and standard for each of these products.

brands in similar fashion. Their unique packaging gets noticed easily from array of similar
products in market shelves. Their consumers also find it tasty and different at the same time
because of the way of finding the right balance of taste and texture. Their latest brands include
Golden Harvest Sauce and Ketchup™, Golden Harvest Chanachur™, Potos™, Googly™ and
Golden Harvest Potato Crackers™ from the house of Golden Harvest Foods Ltd.
 Golden Harvest Dairy Ltd.
For a long time finished dairy products has been relying heavily on import. Recently there has
been a lot of investment in the dairy sector. With its experience in agro value addition, Golden
Harvest has started a state of the art dairy farm in Gowainghat, Sylhet. Since its inception, the
Dairy unit of Golden Harvest has been producing high quality milk and milk based products
like Liquid Milk, Ghee, Yogurt, Paneer, Mozzarella cheese, etc.

The farm currently has 7+ acres of high land with indoor herd management facilities. The
project is in continuous expansion and involves a herd with a size of more than 700 high
yielding cows directly and indirectly. The cows and calves are kept in a hygienic and
comfortable environment with full time supervision. Good quality feeds and fodder, round the
clock veterinarian support and routine vaccination program ensure good health of the herd and
great milk from the cows. More than 6 acres of land is being cultivated with high breed grasses
to ensure continuous green grass supply.

In addition to its own contribution towards agricultural value addition, Golden Harvest has
been providing high breed calves to the neighboring farmers as part of its social responsibility
initiative. These calves will contribute in the farmers’ financial stability and provide a ready
source of dairy milk to bolster their daily mix of nutritious food intake. Golden Harvest is also
arranging regular training, vaccination programs and providing medicine and veterinarian
services on a continual basis. Good quality milk from these cows are also being bought by
Golden Harvest, in which way the farmers get continuous support for this contract farming
program; and are able to quickly scale up their cattle numbers with financial assurance of
sustainability.
 Golden Harvest Developers Ltd.
Golden Harvest Developers Limited has come a long way to symbolize commitment,

land, air, and marine transport. NEBD has its own warehouse facilities in Dhaka, Gazipur-
Mawna, Tongi and transportations management solution nationwide with offices in Dhaka,
Chittagong, Benapole and Ishwardi.

 Golden Harvest Express
An express solution to all the Golden Harvest products. Golden Harvest express is a concept
store with the dream of facilitating all of Golden Harvest’s product directly via an outlet to
general population.

They have started their operation from Sylhet with the vision of expansion. Their promise to
customer is to provide not only high quality & healthy products but also a better & complete
service.

Conclusion
It can be concluded that the trip was successful and we believed that our objective was
achieved. We learned something new and beneficial for our academic work. There is a
tremendous possibility for agro food industries in our country and Golden Harvest Company
is one of the most beneficial companies of the country. It was a well recommended trip
especially for Agribusiness students in order to help to improve agro industry products to reach
the same standard of overseas products in the future.
